Please wait...Absinthe + Meringues is inspired by the Columbus Symphony Orchestra and BalletMet's March 22-24 performances of The Rite of Spring, the ballet and orchestral work that made its debut May 29, 1913, in Paris. The work, avant garde for the time, stirred the upper class audience to jeer the performers and throw punches among themselves in the seats!
Absinthe + Meringues tells the story of The Rite of Spring and its fallout. The absinthe-laced cream—green like spring foliage and grass—represents the wild side, the artists, the bohemians, who were enthusiastic imbibers of the Green Fairy at the time. The perfect, precisely made, hand-piped meringues, which have to be made the same way time after time, represent tradition and intolerance to change and the upper class audiences of the day. Over time in the magical absinthe ice cream, the meringues get crushed (when the ice cream is scooped)—just as The Rite of Spring changed the audience in 1913.
