Profile No. 1 features Renata Harrison, who on her first day back in 2010 learned how to make stracciatella, which involves gently pouring melted chocolate into cold cream while whisking slowly to weave tiny ribbons.

“Before I started working here I assumed machines made every single thing,” Renata said. “I was really surprised when I walked into the kitchen and saw people actually chopping mint, whisking chocolate, and pouring cream by hand.”
